Gluten & Dairy Free Challenge – Days 36-40

And as is always, there is always a challenge within a challenge. This time it was having friends over for the opening ceremony and avoiding all the delicious sweets and foods – foods I would normally devour but still have to avoid for a few more weeks. Though the challenge got difficult for a few hours I still made it through unscathed.

It was tough, no doubt, and I definitely wanted to forgo the challenge, if just for a few hours, but as I mentioned before it is a 60 day challenge so 60 days it will be. What was nice though, is that there are a lot of Asian dishes that are naturally gluten and dairy free. While looking for something Korean to make, since South Korea is the host country, the first two recipes I found of Korean beef and potatoes were naturally gluten and dairy free. That was nice, I did not have to make any substitutions or have to make any extensive searches. That made it a lot easier. For those of you thinking about going gluten and dairy free Asian cuisine just might become your favorite food. In the hectic nature of having friends over I did not get a chance to take pictures of what I made but the recipes are below.

Even though I have 40 days behind me now I am still struggling with wanting my normal food and with my impulse food buying. Part of the struggle is something that is common to all mankind – if I am denied something then that is the very thing I want. If I am told I cannot have gluten then I long for breads, or if I cannot have dairy then I desire ice cream. It is the struggle to have what you are told you cannot. The impulse buying, however, is something of a larger issue that is going to take more than 60 days to overcome. With time and patience though, it is possible to overcome it all.
