Gluten & Dairy Free Challenge – Days 1-5

The stuffiness, being groggy and having an overall desire to do nothing is exactly how I like to begin new challenges. That being said with loads of sarcasm starting the first 60 day challenge has had its own challenges – it’s a challenge within a challenge. It is also the cause of the delay for this post. I hope to be timelier with my updates as I get better, but back to the first few days of the Gluten-Dairy Free Challenge.

Before the challenge even started I had an inkling one of the keys to success is planning ahead. This became very evident from day one. Because I was not feeling very well I had to cook something that would last a few days but was also easy to make. I was given a recipe for a slow cooker chicken chili. (Note, I will provide links to all recipes and list any substitutions at the end of each post). I have made it before, so I knew it was decent enough, but this time I could not add the usual cheese and sour cream. Eating the chicken chili over corn chips made for a tasty meal.

Filling that urge on a gluten-dairy free diet is much harder than the meals themselves. There are a lot of deserts that have either wheat or dairy, many both. However, I remembered making a flour less cake a few years ago using beaten eggs. Making some slight adjustments to the recipe it didn’t turn out too bad. I will admit though, because it is denser I did want some milk to go with it. I would read the menu beforehand, reading all the ingredients, even for the sauces, to make sure no wheat or dairy was used. It all goes back to planning, it is possible to keep to the challenge, I just have to plan ahead.

If there is a lesson to be had in the first few days it is many challenges are possible to complete. What it takes is an internal desire to see it through and planning to make sure one stays on track. With me the first few days have been extra challenging due to the head cold, but I have remained true to the challenge. As I get better I hope to plan out my meals even more so. The better the planning the tastier the meals.
