Gluten & Dairy Free Challenge – Days 5-10

I still have 50 days to go but I am almost 20% through my first challenge. Going both gluten and dairy free when I have been used to both is a challenge. It takes dedication and more importantly planning. Slowly but surely I am accomplishing this challenge.

Because of how the challenge started (with a head cold) I did not explain why I am doing this challenge. I go over it in better detail in the above video but the essence is gluten and dairy are said to be agitators of auto-immune diseases such as MS. I am going to test that and see if my symptoms do get better or if they stay the same. I am curious to see what happens. Until next time…

For the marinade use:
1/4 cup lime juice
2 tbsp honey mustard
2 tsp olive oil
1/4 tsp ground cumin
1/8 tsp garlic powder
1/8 tsp ground red pepper

For the meatloaf I used turkey instead of beef and oats instead of bread crumbs. For the mashed potatoes I used half and half vegetable stock and almond milk instead of milk and non-dairy margarine.
